Vegetable Stir Fry

Ingredients & Instructions:

➡️ Ingredients:

2 Tbsp olive oil

1/4 tsp red pepper flakes

2 Tbsp soy sauce

1 tsp minced garlic

2 cups chopped broccoli

1 cup chopped bell peppers

1 cup chopped asparagus

1 cup frozen green peas

1/2 cup edamame

1 can garbanzo beans (drained & rinsed)

1 package tempeh (diced)

2 cups uncooked Basmati rice

3 cups vegetable broth
 

➡️ Instructions:

-Cook rice according to directions, using vegetable broth rather than water

-In large skillet, sauté garlic and red pepper flakes in olive oil and soy sauce on medium-high heat (~1 min)

-Add all veggies, beans, and tempeh and stir to cover in oil

-Stir and reduce heat to medium

-Cover skillet and cook for 5-7 minutes stirring occasionally

-Reduce heat to low and cook for another 15-20 minutes (stirring occasionally)
 

-Serve veggie stir fry over rice

➡️ Serves 3-4 adults generously.
