😋Looking to spice up Taco Night?!😋
-1 can refried beans (vegan)
-1.5 cups cooked quinoa
-1 small tub garlic or regular hummus
-1/2 small tub lite cream cheese (or cream cheese substitute)
-2 small crushed avocados
-1 can black beans (drained & rinsed)
-1 cup mango-peach salsa (if you want more spice, mix in hot salsa)
-Cook quinoa according to directions the night before and store in fridge
-In a deep square dish, layer all seven ingredients in the order listed above (refried beans on bottom & so on)
-Serve with tortillas, tortilla chips, naan bread, or over field greens for a low cal option
Serves 3-4 adults generously.
