Lentil & Vegetable InstaPot Curry

⭐️CREATE: Ingredients & Instructions


1 Tbsp olive oil

2 Tbsp yellow curry powder

1/2 tsp cumin seeds

1/2 tsp mustard seeds

1 tsp minced garlic

1 cup chopped broccoli

1 cup chopped asparagus

1 cup lentils

1 can garbanzo beans (drained & rinsed)

1 package tempeh (diced)

4 cups vegetable broth (1 cup for InstaPot & 3 cups for rice)

2 cups uncooked Basmati rice


-In a large saucepan, cook rice according to directions, using 3 cups vegetable broth rather than water

-Place all other ingredients in InstaPot, stir thoroughly, & use Beans setting on low.

-Serve lentils & veggies over rice
