Moroccan Quinoa

A savory and sweet dish. Use this one as a side or an entree! 😋

⭐️CREATE: Ingredients & Instructions


-1.5 cups of carrots (chopped or shredded)

-2 cups yellow squash (cubed)

-2 cups zucchini (cubed)

-1 tsp olive oil, 1/4 tsp salt, 1/8 tsp pepper (for roasting veggies)

-2.5 cups vegetable broth

-1/4 cup honey

-1/4 cup lemon juice

-2 Tbsp olive oil

-1 tsp ground cumin

-1 tsp coriander

-1/4 tsp red pepper flakes

-1.5 cups dry quinoa

-1/2 cup sliced dried apricots

-1 cup tempeh (diced)


-Preheat over to 450 degrees with baking sheet inside oven

-Toss carrots, squash, & zucchini in large bowl with oil, salt, and pepper

-Place veggies on hot baking sheet and roast for 25 minutes

-Combine broth, honey, lemon juice, olive oil, cumin, coriander, and pepper flakes in saucepan and bring to a boil

-Add quinoa and cook for 15-20 minutes

-Off heat, stir in apricots and tempeh

-Add roasted vegetables and toss to combine
