Oranges & Tempeh with Farro
A curious dish for those feeling adventurous! An interesting combination of the sweet, salty, bitter, sour, and savory tastes. I really liked it!
⭐️CREATE: Ingredients & Instructions
➡️Ingredients:
-1 cup dry farro
-2 cups chopped cauliflower
-1/2 cup orange juice
-2 Tbsp white wine vinegar
-1 cup chopped green olives
-1 Tbsp minced orange zest
-1 Tbsp Dijon mustard
-1/4 cup olive oil
-Pinch of salt & pepper
-3 oranges (peeled & chopped)
-2 cups chopped tempeh (~one block)
-1/4 cup shredded fresh mint leaves
➡️Instructions:
-Cook farro according to directions, adding cauliflower during last minute of cooking before draining
-Whisk orange juice, vinegar, olives, orange zest, Dijon, and salt and pepper to create dressing
-Combine farro/cauliflower, oranges, tempeh, and mint in a large bowl
-Stir in dressing and toss to coat
-Salt to taste
➡️Serves 4-5 adults generously
