Orzo Salad



➡️ Ingredients:

2 cups orzo

2 cups shredded kale

1 cup broccoli

2 cups zucchini & butternut squash (shredded)

1 cup green peas

1/2 cup sliced kalamata olives

1/4 cup pecans

Parmesan cheese (to taste)

Dressing Ingredients:

3 Tbsp avocado oil

3 Tbsp olive oil

2 Tbsp white wine vinegar

2 Tbsp Dijon mustard

1 Tbsp lemon juice

1 Tbsp minced garlic

1 tsp balsamic vinegar

Salt & pepper to taste


➡️ Instructions:

-Cook orzo

-Sauté veggies in olive or avocado oil w/ 1/2 Tbsp garlic & 1/2 tsp red chili peppers (keep kale, pecans, & olives for serving)

-Whisk dressing ingredients

-Place bed of kale on plate/in bowl

-Place orzo on top of kale

-Serve veggies on orzo

-Top with dressing, pecans, olives, & Parmesan
