Peanut Butter & Banana Flourless Protein Muffins
These have quickly become a favorite for Lucy (my toddler) and me - partly because we love peanut butter, and partly because we always manage to have brown bananas around. 🤦♀️ Anyone else always buy too many bananas?!
⭐️CREATE: Ingredients & Instructions
-3 medium to large brown bananas
-1 cup creamy peanut butter
-2 eggs (could also use 1/2 cup tofu or 1/2 cup soy or coconut yogurt)
-1/4 cup honey
-1/2 cup applesauce
-3/4 cup protein powder of choice
-1 tsp vanilla extract
-1 tsp baking powder
-1/2 tsp salt
-1/2 cup chocolate chips (optional)
-Preheat oven to 400 degrees
-Blend all ingredients (except chocolate chips if using)
-Stir in chocolate chips (if using)
-Grease standard muffin tin or use cupcake liners
-Scoop batter into muffin tin
-Bake 13-15 minutes
