Pearled Couscous with Veggies

🥦 Pearled Couscous with Veggies 🥬

Great on its own - if you eat fish, also great with a hearty white fish (i.e. Black Sea bass)

➡️ Ingredients:

-2 Tbsp minced garlic

-2 Tbsp olive oil

-1 tsp salt

-1/2 tsp red pepper flakes

-1 cup sliced carrots

-2 cups mushrooms (portobello recommended)

-2 cups broccoli

-2 cups pearled couscous (also know as Israeli couscous)

-2.5 cups vegetable broth

-2 cups spinach

-1 cup cherry or grape tomatoes (halved)

For toppings:

-sliced almonds

➡️ Instructions:

-Sauté garlic in olive oil on medium-high heat for 2-3 minutes

-Add carrots, mushrooms, & broccoli - cook for 2-3 minutes

-Add broth, couscous, salt, and red pepper flakes

-Bring to a boil

-Reduce heat to medium-low & cover

-Cook for 10-12 minutes

-Stir in spinach & tomatoes until spinach is wilted

-Serve topped with sliced almonds

Serves 3-4 adults generously.
