Saffron Quinoa


-2 Tbsp minced garlic

-1 Tbsp olive oil

-1 cup dry quinoa

-1/2 cup vegetable broth

-1 cup water

-1 dried bay leaf

-1 tsp saffron threads (oh my is saffron expensive…but worth it!)

-7 asparagus stalks (diced)

-1 tsp salt

-1 cup frozen peas

-1 jar chopped pimentos

-BONUS ingredient: I like to add 1 cup of chopped tempeh to this dish for more protein


-Sauté garlic in pan over medium heat until fragrant

-Stir in quinoa, vegetable broth, water, bay leaf, saffron, asparagus, tempeh (if using) and salt

-Bring to a boil then reduce heat to low

-Cover and cook for 20-minutes

-Remove pan from heat and discard bay leaf

-Stir in peas and pimentos

-Cover pan and let sit for 5-7 minutes

-Fluff prior to serving


Serves 3-4 adults generously.
