🥦 Shell Pasta with Broccoli & Asparagus 🥦
➡️ Ingredients:
-1 small box shelled pasta (small or large shells)
-3 cups chopped broccoli
-1 cup chopped asparagus
-3 Tbsp olive oil
-1 Tbsp minced garlic
-1/2 tsp red pepper flakes
-1 tsp salt
-1/2 tsp black pepper
-1 can cannellini beans (drained & rinsed)
-1 can (14.5 oz) diced tomatoes
-2/3 cup dry white cooking wine
-2/3 cup shredded Romano cheese
➡️ Instructions:
-Cook shelled pasta according to directions; reserve 1/2 cup of pasta water when draining
-Heat oil on medium-high in large skillet
-Add beans and cook for 4-5 minutes
-Stir in broccoli, asparagus, tomatoes, wine, garlic, pepper flakes, salt, and black pepper
-Cover and simmer for 7 minutes
-Stir in pasta & add water to desired consistency
-Sprinkle Romano cheese over pasta once served
➡️ Serves 3-4 adults generously.
