Spicy Pumpkin Pasta


-6 oz. dry fettuccine rigate

-2 Tbsp. butter or butter alternative

-1 tsp. minced fresh garlic

-3 Tbsp. minced fresh sage

-1/2 tsp. red pepper flakes

-1 cup canned pumpkin puree (or you could puree the inner remains of your Halloween Pumpkins…if still good)

-1 cup vegetable broth

Optional for toppings:

-goat cheese

-chopped hazelnuts

-salt & pepper to taste


-Cook pasta according to directions

-Melt butter in saucepan over medium-high heat (2-3 minutes)

-Stir in garlic (1-2 minutes)

-Add 1 Tbsp sage

-Add red pepper flakes

-Add pumpkin puree & vegetable broth

-Stir in salt & pepper to taste

-Toss pasta with sauce, remaining 2 Tbsp sage, goat cheese, and hazelnuts


Serves 3-4 adults generously.
