Thunder & Lightning Pasta

⭐️CREATE: Ingredients & Instructions

➡️Ingredients:

-1/2 box shell pasta

-1 Tbsp olive oil

-1 can chickpeas (drained & rinsed)

-2 cups yellow squash (cubed)

-1 cup asparagus (chopped)

-1/2 cup frozen peas

-1/2 cup vegetable broth

-4 Tbsp pesto sauce

-1/3 cup chopped fresh mint leaves

-1/2 Tbsp minced garlic

-1 tsp minced lemon zest

-1 tsp fresh lemon juice

➡️Instructions:

-Cook pasta according to directions and drain

-Heat olive oil in large sauté pan over high heat

-Add chickpeas, squash, asparagus, and peas and cook until asparagus is tender (~15 minutes)

-Stir in pasta, broth, pesto, garlic, zest, mint, and lemon juice

-Cook to heat through (~3 minutes)

-Salt to taste

➡️Serves 4-5 adults generously
