Tots with Broccoli, Squash, & Cashew Cheese

➡️ Ingredients:

3 Tbsp olive oil (1 Tbsp for tots; 2 Tbsp for veggies)

1/4 tsp red pepper flakes

1/2 tsp salt for tots

1/2 tsp garlic powder for tots

1/2 tsp pepper for tots

1/2 tsp salt for veggies

1 tsp minced garlic for veggies

1 bag/box tots (whatever is the right size for your family)

2 cups chopped broccoli

2 cups chopped squash

1 can garbanzo beans

Cashew Cheese Ingredients:

1.5 cups raw cashews

1/3 cup vegetable broth

1/2 tsp minced garlic

1/2 tsp salt

1 tsp turmeric

➡️ Instructions:

-Place tots on large cooking sheet

-Cover with olive oil, salt, garlic powder, and pepper

-Cook tots according to directions (usually at 425 degrees for about 30-minutes)

-In large skillet, sauté garlic and red pepper flakes in olive oil on medium-high heat (~1 min)

-Add broccoli and squash and stir to cover in oil

-Add salt

-Drain and rinse garbanzo beans and add to skillet

-Stir and reduce heat to medium

-Cover skillet and cook for 5-7 minutes

-Stir and reduce heat to low

-Cover skillet and cook for 15-20 minutes

For Cashew Cheese:

-Place all ingredients in blender

-Blend on high

-Add more vegetable broth if you like cheese to be smoother

➡️ Serves 3-4 adults generously.
