💚 Vegan Thai Green Curry 💚
➡️ Ingredients:
3 tbsp. green curry paste
1 tbsp. garlic
1 tsp. mustard seeds*
1 tsp. cumin seeds*
1 tsp. fresh ginger*
1 tbsp. olive oil
2 cans coconut milk
1 palm sugar nugget
5 kaffir lime leaves
1/2 cup Thai basil
1 cup diced tempeh
1/2 cup diced butternut squash
1/2 cup diced broccoli
5 diced asparagus stalks
1/2 cup frozen green peas
1/2 cup frozen edamame
2 cups of basmati or jasmine rice
*optional for additional flavor
➡️ Instructions:
Cook rice according to directions
Heat oil on high in skillet
Sauté garlic until fragrant
Add one can coconut milk
Add palm sugar nugget
Add red curry paste
Bring to a boil - stir occasionally
Add kaffir lime leaves
Add Thai basil
Add tempeh & vegetables
Add second can of coconut milk
Bring to a boil - stir occasionally
Turn heat down to Medium-Low
Simmer for 15-20 minutes
Serve curry over rice
